Mulligatawny Soup

Oh my God, one of the few things I made recently that I loved. FULL of flavor!

When I first tasted it it was weak and flavorless, primarily because I bumped up the ingredient quantities and didn't have the spices to match.



Ingredient Changes:
  • 1 onion (not 1/2)
  • 4 stalks celery
  • 3/4 cup white wine, cooked down with the vegetables
  • 3 Tbsp minced FRESH garlic
  • 1-1/2 GRATED carrots
  • 1 gala apple, skin removed and diced
  • 1 Tbsp brown sugar
  • 2-3 Tbsp dark brown soy sauce
  • 8 drops fish sauce
  • 1-2 tsp paprika and salt chicken spice
  • 2 large packages (8 oz total) chicken stock
  • 4 tsp mild curry
  • 2 dashes ground red pepper
  • MSG! Probably about 1/2 tsp. Really kicked up the flavor.

Cooking Notes:
  • Did not add cream at the end. Added cream the first time I made this. It didn't need it.

Next Time:
  • I added a full cup of rice. Too much! Should add 1/2 cup.
  • Threw some fresh parsley as garnish. Should use celery leaves.
