I've been making Mac and Cheese for about 30 years. Thought I nailed it with Velveeta chunks, egg and milk, but I was wrong. That's still good, and the kids especially love it. Cowboy Kent Rollins is The Man when it comes to Mac and Cheese.

You can add the bacon, green chilies and bread crumbs if you like. I did the first time but found I like it better straight.
The essential secret to this approach to Mac and Cheese is that you start with a roux, then add the grated cheddar to the sauce. Topping with Mozzarella is a winning change as well.
