Beef Barley Soup in the Crockpot

Whenever I can use my crock pot I'm a happy man. Here's a great recipe from the Chunky Chef for beef barley soup in the slow cooker.



I didn't remember changing anything from the original recipe. I used a chuck steak as the beef. I seasoned it on a rack and let it sit a bit. Then I cut out most of the fat. I seared the beef on the stove-top and did something different with the fat pieces. I figured that if I wrapped the fat and trimmed meat in muslin and threw it into the crock pot that we'd have more flavor. And the soup was extremely favorable.   The downside was that there was too much fat in the stock, so I removed the fat with my trusty fat separator.
